Recipe Time: Simple Thai Salmon Noodle Soup

Spring may not be far away, but the winter weather is still bringing a chill to most people. That's why now may be the perfect time to prepare yourself a batch of Thai salmon noodle soup to keep you warm on these cold February nights!

This quick and easy treat shouldn't take longer than 10-15 minutes to prepare and serve, so it's an excellent option if you're in a rush or simply don't fancy spending hours in the kitchen.

Ingredients

  • Between 500ml and 1 litre of chicken stock (depending on your preferred consistency)
  • 2 tablespoons of Thai red curry paste
  • 100g of flat rice noodle or egg noodles
  • Juice of one lime
  • 1 tablespoon of soy sauce
  • 2 fresh salmon fillets
  • 1 red chilli, shredded
  • Chopped coriander

Method

  1. Pour the chicken stock into a deep pan and bring to the boil. Stir in the curry paste and then add the noodles.
  2. Once the noodles begin to soften, add the red chilli and the fresh salmon fillets.
  3. Cook the salmon for approximately three to four minutes or until cooked throughout.
  4. Take the pan off the boil and stir in the lime juice and soy sauce.
  5. Ladle the appropriate portions into bowls and then sprinkle the coriander on as a garnish. Serve piping hot.
